Novak Saperavi-Feteasca Neagra 2019

Novak attaches great importance to quality work. Both the vine care and the harvest are done by hand. For this vintage, the harvest and selection of ripe grapes took place at the end of October. In the cellar, the winemaker combines traditional methods with modern techniques: cold maceration followed by must fermentation in stainless steel tanks at controlled temperatures. Both varieties matured for a few months in wooden barrels. Minimal addition of sulfur and a single filtration process before bottling to obtain the varietal aromas.
